Creamy Sun-dried Tomato Tortellini Recipe

- cheese tortellini: 12 ounces
- extra virgin olive oil: 1 teaspoon
- garlic clove, minced: 1
- sund-dried tomatoes: 1 cup
- no salt added sun-dried tomatoes: 14½
- crushed red pepper: ¼ teaspoon
- salt and pepper: to taste
- heavy cream: 1 cup
- parmesan, freshly grated: 1 cup
Step 1: Cook the tortellini according to package directions. Meanwhile, chop sun-dried tomatoes.
Step 2: Heat olive oil in a 12 - inch saute pan. Add garlic and cook for 1 minute, until just starting to soften.
Step 3: Stir in sun-dried tomatoes, diced tomatoes and crushed red pepper. Let cook for about 2 minutes to let the flavors come together.
Step 4: Add the heavy cream, stirring constantly, until fully incorporated. Reduce the heat to low, cover and simmer for 10 minutes. Uncover and stir in the parmesan cheese.
Step 5: Add drained tortellini to pan and stir well to combine. Cook, uncovered, on medium - low heat for another 3 - 5 minutes until thickened slightly. Serve immediately.
