Pasta with Grilled Foil Packet Veggie Sauce Recipe
This pasta with grilled foil packet veggie sauce recipe makes a healthy and filling meal.
- Japanese eggplant, diced: 1
- summer squash, diced: 1
- onion, finely chopped: ½
- grape tomatoes: 2 cups
- garlic: 4 cloves
- olive oil: ¼ cup
- salt and pepper: to taste
- farfalle pasta: 1 pound
- Romano cheese, freshly grated: ½ cup
Step 1: Preheat the grill to its medium setting, or prepare charcoals for grilling.
Step 2: On a large sheet of foil, layer the eggplant, squash, onion, tomatoes, garlic, olive oil, salt, and pepper. Raise the sides of the foil and press and fold to seal until a foil packet is formed.
Step 3: Place the foil packet on the grill and cook for 25 minutes. The vegetables should be tender and translucent when done.
Step 4: Meanwhile, cook the pasta according to package directions. When the veggies are done, carefully open the foil packet (beware! the steam will be incredibly hot!) and combine with the pasta. Toss well. Add the cheese and toss again, adjusting the seasonings as desired. Enjoy!
